Chocolate Ricotta Mousse

So often when you are done with your recipe that you bought your big container of ricotta for (and you always buy the bigger one because it is more cost effective that way), you still have ricotta left and you don’t know what to use it for. I decided to go on the hunt for a healthy dessert that I could indulge in without feeling guilty.

This comes together in about 5 minutes (plus a little bit if you want it chilled) so you can whip this up any time you are craving something slightly sweet and chocolaty. If you are used to making healthy switches in your diet this will be more than perfect for you. If you are, like my family, not used to subbing healthy alternatives in for other things – this may not satisfy your sweet tooth. If you (or your family) want it more sweet – just add more sweetener!

Strawberry Chocolate Pudding Ice Pops

There’s always room for Jello (Pudding Pops)!

Growing up my mom always used her Tupperware Ice Pop Molds to make me fresh Ice-Pops all summer long! When I moved into my own house, mom figured she would not be making many more pops (until at least she had grand kids to make them for) so she gave me her molds, yay! One of my favorite (and easiest) ice pops always were Pudding Pops (which I also found out were also Rich’s favorite type when he was growing up – I love being able to make my PA Wedding Photographer Fiance happy).

Basically all that needs to get done for the Perfect Pudding Pops is to start out by making your favorite Pudding (instant or homemade or cooked). Then you just need to pour that pudding into your pop mold of choice (store-bought or ice cube trays, or silicone molds, or paper cups), and then freeze them up for a few hours.

After Strawberry Picking last week I knew that some Chocolate Covered Strawberry flavored Ice Pops would be amazing. So taking my love of Pudding Pops and then just adding some fresh Strawberries to the mix equaled these delicious Chocolate Covered Strawberry Pudding Pops!

Chocolate Covered Marshmallows – “Smore’s Pops”

We love S’mores around here! One of the great joys of the summer is relaxing around a campfire just hanging out with friends. While enjoying that fire – marshmallows toasted (or burnt) to perfection are just right! After enjoying that fire you come inside to head to bed and realize that you now smell like you’ve been camping all week.

Well -FEAR NO MORE… I have your Smoke-Free-S’mores here!

Chocolate Chip Cookie Dough Cake

“The Way to a Man’s Heart is Through his Stomach”

The man that I love just happens to also love Cookie Dough. When I came across Something Shiny’s Cookie Dough Cake, I knew that I had no other choice but to make this for him. In the past I have surprised Rich with Chocolate Chip Cookie Dough Cupcakes, also nice batches of Raw (with egg) Cookie Dough to make him smile, and even Cookie Dough Truffles for Holidays! This cake I knew would be a big hit – even if it meant many hours of preparation going into it (do not let the long list scare you off – it is worth every second you will spend working on it)!

Rich knew that he was getting some sort of baked goodie for Valentines Day this year, but I do not think that he expected this. We started this evening out with some wine and cheese and meats that I had picked up to hold him over until I could finish making the cake and then make dinner, and the evening of food was one that we totally enjoyed – especially with this cake ending the whole night. People may tell you that you need to spend lots of money to make people happy but I know that the best gifts come from the heart (and go to the stomach?).

Before reading any further please promise me that you will not worry about your diet for just a little bit – happiness is what you make it 🙂

Chocolate Red Wine Cupcakes

Most everyone enjoys Chocolate (and those that don’t need their heads checked, but that’s just my unsolicited opinion). Also, almost everyone can also find a Red Wine that they like (even if they don’t agree with those around them on what makes it good).

These Cupcakes combine the love of chocolate & wine.

For these Chocolate Red Wine Cupcakes I figured the Cupcake Winery wine would be a perfect pairing! Cupcake Winery’s Red Velvet is a combination of Zinfandel, Merlot, Cabernet Sauvignon and Petite Sirah – which has all of the perfect elements to pair with chocolate! But, if you enjoy sweet fruits a great wine would be a nice Blackberry or Strawberry Wine – that would make this a very sweet variation but I can’t wait to try that!! No matter what, the flavor of the wine will be a nice subtle undertone to the cupcakes but will shine through more in the frosting, so be sure to use something that you like!
